Install the updated version of Clover as recommended above. I have also set it up with a new SMBIOS for an iMac 19.1, which has been tested via the Apple support site to ensure it is not used by a real Mac. This is best done with another boot argument -wegnoegpu or a custom SSDT-dGPU-Disabled.aml. The Nvidia GPU needs to be disabled not the IGPU. So it will never work well or with full acceleration, as there are no working drivers. This will force the discrete GPU in to VESA mode, with between 7 & 22mb of VRAM. The RTX card will boot, if you add the nv_disable=1 boot argument to the ist.

There are no drivers for the Nvidia GPU in any version of macOS. The IGPU should be enabled in the bios, as your RTX 2080 Ti is unsupported in macOS. IntelMausi.kext is the newer of the two, so I would go with that kext. You only need one of these kexts - IntelMausiEthernet.kext or IntelMausi.kext. You have two Ethernet kexts in your /CLOVER/kexts/Other folder for your motherboard's Intel i219v Lan port.

You also seem to be short a few UEFI drivers for your CFL system, when compared to other Z390 systems. I would recommend you use a recent version of Clover, Clover_r5119 seems to be fairly stable and can be downloaded from GitHub. Your Clover version is pre Clover_r5000, as seen by the presence of the /CLOVER/drivers64UEFI folder and lack of a /CLOVER/drivers/UEFI folder. You are missing a few essential SSDT's for a Coffee Lake (CFL) system booting Catalina, probably the ACPI errors that lead to the kernel panic. To do this you need to make sure you select the two highlighted customisations when running the Clover installer.Д¬ustomisation screen in clover installer, with UEFI options selected This is wrong for your UEFI capable Coffee Lake system. It looks as though you have installed Clover in Legacy Mode.
